The Perfect Cake Recipe For Those Who Have to Stay Away From Dairy Products

There are a lot of people out there who absolutely love dairy products or more specifically who love cakes but cannot eat them because of cholesterol problems. Such people have been advised by their doctors to stay away from eggs and milk especially. Now eggs are a crucial part of the cake; an ingredient that holds the cake together. Milk is another important ingredient but cake recipes have been developed over time to cater to the needs of those people who cannot eat products with milk or eggs in them. This is one such cake recipe that will surely be a huge hit with all those people who are under restrictions.

The ingredients used in the cake recipe to make six servings are:

Accordingly a 9 * 9 inch baking pan is greased for use.

Take a large mixing bowl. At first in this cake recipe, you need to resift the flour and the baking powder, baking soda, salt and sugar. In another bowl, you need to take the dry egg replacer and add to it some water which should approximately be about an egg's quantity. Once the egg replacer mixture forms, vanilla and sour cream are mixed in. This forms the egg mixture. Once you add the egg mixture to the flour mixture, beat it thoroughly. Next the batter is spread in uniform layers in the baking pan. If you want, at this point, you can add blueberries and walnuts to this mixture. Slightly stir this to ensure that these additional items stay in the top layer alone.

Use another bowl, in order to prepare the topping you need to add to the cake. It will require about five tablespoons of sugar, margarine and cinnamon. The mixture is mixed with a fork until it looks like a cornmeal which means it should not look smooth. The topping is then sprinkled over the batter in any way that you like.

The cake is then baked in an oven that has been preheated for about twenty to twenty-five minutes. Another way to ensure that the cake has been thoroughly cooked is to insert a toothpick in the batter. When and if it is properly heated, the toothpick will come out of the crown of the batter on its own. Before you serve the cake, it is advisable that you cool the cake a little.

Seasonal Allergies: Nip Them in the Bud

Spring means flower buds and blooming trees — and if you're one of the millions of people who have seasonal allergies, it also means sneezing, congestion, runny nose and other bothersome symptoms. Seasonal allergies — also called hay fever and allergic rhinitis — can make you miserable. But before you settle for plastic flowers and artificial turf, try these simple strategies to keep seasonal allergies under control. 

Reduce your exposure to allergy triggers

To reduce your exposure to the things that trigger your allergy signs and symptoms (allergens):
  • Stay indoors on dry, windy days — the best time to go outside is after a good rain, which helps clear pollen from the air.
  • Delegate lawn mowing, weed pulling and other gardening chores that stir up allergens.
  • Remove clothes you've worn outside; you may also want to shower to rinse pollen from your skin and hair.
  • Don't hang laundry outside — pollen can stick to sheets and towels.
  • Wear a dust mask if you do outside chores. 
Take extra steps when pollen counts are high
 
Seasonal allergy signs and symptoms can flare up when there's a lot of pollen in the air. These steps can help you reduce your exposure:
  • Check your local TV or radio station, your local newspaper, or the Internet for pollen forecasts and current pollen levels.
  • If high pollen counts are forecasted, start taking allergy medications before your symptoms start.
  • Close doors and windows at night or any other time when pollen counts are high.
  • Avoid outdoor activity in the early morning when pollen counts are highest. 
Keep indoor air clean
 
There's no miracle product that can eliminate all allergens from the air in your home, but these suggestions may help:
  • Use the air conditioning in your house and car.
  • If you have forced air heating or air conditioning in your house, use high-efficiency filters and follow regular maintenance schedules.
  • Keep indoor air dry with a dehumidifier.
  • Use a portable high-efficiency particulate air (HEPA) filter in your bedroom.
  • Clean floors often with a vacuum cleaner that has a HEPA filter. 
Try an over-the-counter remedy
 
Several types of nonprescription medications can help ease allergy symptoms. They include:
  • Oral antihistamines. Antihistamines can help relieve sneezing, itching, runny nose and watery eyes. Examples of oral antihistamines include loratadine (Claritin, Alavert), cetirizine (Zyrtec Allergy, others) and fexofenadine (Allegra Allergy). Older antihistamines, such as diphenhydramine (Benadryl) and chlorpheniramine (Chlor-Trimeton), are also effective, but they can make you drowsy.
  • Decongestants. Oral decongestants such as pseudoephedrine (Sudafed, Afrinol, others) can provide temporary relief from nasal stuffiness. Decongestants also come in nasal sprays, such as oxymetazoline (Afrin) and phenylephrine (Neo-Synephrine). Only use nasal decongestants for short-term relief. Long-term use of decongestant nasal sprays can actually worsen symptoms (rebound congestion).
  • Nasal spray. Cromolyn sodium nasal spray can ease allergy symptoms and doesn't have serious side effects, though it's most effective when you begin using it before your symptoms start.
  • Combination medications. A number of allergy medications combine an antihistamine with a decongestant. Examples include the oral medication Drixoral, which combines the antihistamine dexbrompheniramine maleate with the decongestant pseudoephedrine sulfate, and the nasal spray Claritin-D, which combines the antihistamine loratadine with pseudoephedrine sulfate. 
Rinse your sinuses
 
Rinsing your nasal passages with distilled, sterile saline solution (nasal irrigation) is a quick, inexpensive and very effective way to relieve nasal congestion. Rinsing directly flushes out mucus and allergens from your nose. Look for a squeeze bottle or a neti pot — a small container with a spout designed for nasal rinsing — at your pharmacy or health food store. Use water that's distilled, sterile, previously boiled and cooled, or filtered using a filter with an absolute pore size of 1 micron or smaller to make up the saline irrigation solution. Also be sure to rinse the irrigation device after each use with similarly distilled, sterile, previously boiled and cooled, or filtered water and leave open to air-dry. 

Interested in alternative treatments? Consider these

A number of natural remedies have been used to treat hay fever symptoms. Treatments that may help include extracts of the shrub butterbur and spirulina (a type of dried algae). A number of other natural remedies are used to treat allergies, but the benefits aren't clear and some may not be safe — so talk to your doctor before trying one. 

When home remedies aren't enough, see your doctor

For many people, avoiding allergens and taking over-the-counter medications is enough to ease symptoms. But if your seasonal allergies are still bothersome, don't give up. A number of other treatments are available.

If you have bad seasonal allergies, your doctor may recommend that you have skin tests or blood tests to find out exactly what allergens trigger your symptoms. Testing can help determine what steps you need to take to avoid your specific triggers and identify which treatments are likely to work best for you.

For some people, allergy shots (allergen immunotherapy) can be a good option. Also known as desensitization, this treatment involves regular injections containing tiny amounts of the substances that cause your allergies. Over time, these injections reduce the immune system reaction that causes symptoms.

Energy Star Portfolio Manager Helps K-12 Facility Managers Avoid Millions in Energy Costs

The cost to heat, cool, and operate the approximately 98,800 public elementary and secondary schools in the U.S. comes to about $7.6 billion annually, says Lauren Pitcher, a communications director with Energy Star. That's more than the tab for textbooks and computers combined. Indeed, energy costs are typically a school's largest operating expense after salaries, Energy Star reports. The size of the nation's schools' utility bills, combined with ongoing budget constraints, are prompting many k-12 school district leaders to carefully consider ways to save energy. One way they're doing so is by using Energy Star Portfolio Manager

Fortunately, many school districts can cut energy use and costs. Operating costs at the most energy-efficient schools run about 40 cents per square foot less than the costs at average schools, while the least efficient schools use three times more energy than the most efficient, Energy Star reports.

Moreover, reducing energy use doesn't have to mean compromising the education students receive. "We don't teach in the dark," says Eric Hamilton, director of buildings and grounds with the Buffalo-Hanover-Montrose (BHM) Schools in Buffalo, Minn. "We just have a dark room when we leave." BHM, an Energy Star Leader, has avoided about $13 million in energy costs over the past decade, Hamilton says.

It appears that many school districts have taken note of the value of Energy Star. Of the approximately 5,900 Energy Star Partners, about 1,179 (just under 20 percent) are school districts. Partner organizations have committed to measure, track, and benchmark energy performance. They also commit to develop and implement plans to improve energy performance using the Energy Star strategy, and to educate their employees and communities about their organizations' partnerships and achievements with Energy Star.

Moreover, school districts make up 85 percent of all Energy Star Leaders. These organizations have achieved portfolio-wide energy efficiency improvements of at least 10 percent, when measured against their baselines, or have earned an average rating of 75 or better, again, across their portfolio.

The results can be impressive. For instance, the Nash-Rocky Mount school district in North Carolina, which consists of 32 facilities comprising 2.6 million square feet, has avoided $8.1 million in energy costs over the past eight years, says Charles Lamm, energy management coordinator. "We've had up to a 30 percent reduction in (annual) energy use." Even though energy prices jumped about 53 percent between 2003 and 2012, the energy budget increased just $120,000, Lamm says.

The district's work with the Energy Star program, as well as with an outside firm that has helped it track and reduce energy use, were keys to its success, says Mark Strickland, executive director of operations. "We were doing a good job, but realized that we needed outside help and talent," given the rate at which energy costs themselves were increasing.

The St. Tammany Parish Public School District in Covington, La., had similar reasons for partnering with Energy Star, says William Brady, assistant superintendent of administration. "The district could be provided with many valuable resources and ideas in order to help us meet our energy goals and ensure that students are learning to be good stewards of the environment." In the seven years ending in late 2012, the district avoided more than $11 million in energy costs, Brady says. St. Tammany includes 55 schools and 16 support sites.

Mission Solano's 3rd Annual Earth Day Solano Event Joins With Community To Create Garbage Art

Public welcomed to participate in Saturday, April 20th

Suisun City, CA - Mission SOLANO, local artists from the Fairfield Visual Arts Association and the Lawler House Gallery, along with Earth Day Solano volunteers, will create six pieces of unique “garbage art”, created from the trash collected throughout Suisun City on Earth Day Solano, Saturday, April 20th from 10 am – 2 pm.

Three years ago the Earth Day Solano vision, inspired by the gorgeous downtown waterfront in Suisun City, blossomed:

You allowed us to clean up your discarded, thrown away,
trampled-on refuse; we recycled it and now present you with
a piece of art, more beautiful than you thought you could imagine.

This year’s Earth Day Solano art project – six pieces of original art created on the spot on Earth Day April 20th using trash collected from Suisun City targeted cleanup zones – glows as a tangible expression of the Mission SOLANO vision for recycling people. Inspired by the documentary “Waste Land” by artist Vik Muniz, artists came together under the leadership of artist, Aria Zuloaga to plan the art project. “

After watching the movie Waste Land, a group of us from Lawler House Gallery and the Fairfield Visual Arts Association collaborated to create the concept and images for six temporary live art installations on April 20th,” Zuloaga reflects. “We believed in this project from the beginning and after weeks of preparation we’re anxious to see the images and the art unfold. It is a labor of love for our community and for our planet.”

Art became a central part of Earth Day Solano in 2012, when Gilbert Rangel, local esteemed recycled materials artist, created a piece of recycled metals art now on permanent display in the city chambers of Suisun City (see below).

South East Asia measures nearly two million square miles across, holds a population of over 600 million people and includes 10 different countries. Variations on a Bread Making Theme

You know how sometimes even the best cook can get distracted and forget an ingredient? That happened to me once many years back, and I completely forgot to put in the 3 eggs called for in my bread recipe. I was so distracted that even when I had only added 7 cups of flour and the dough already looked too dry, I still didn't realize what was wrong. I made the bread, baked it and we were eating the first loaf. There was a difference in color that I wondered about. That was when I realized that I had utterly forgotten to add the eggs.

Things like this can happen to the best of us, but what I want to demonstrate with this story is that bread making is a forgiving art. Add a little more of this, a little less of that, and you still have a very good loaf of bread. After that episode of forgetfulness, I got thinking. I tried making the bread with only a half stick of butter and two eggs. It turned out great. I substituted 2 cups whole wheat flour for part of the flour and it was great. I wondered what other things I could do with this original recipe.

Remember that when making a substitution or using a different ingredient, the total amount of flour needed will vary. If substituting 2 cups of whole wheat flour, do this at the beginning of the recipe. This way, toward the end of adding flour, you will know that since whole wheat is a thirstier flour, you will likely need less than the full amount. This holds equally true with flax seed. I often mix 1 cup of ground flax seed into the original 2 cups of flour, mixed with the powdered milk and yeast and add it at the beginning. Flax seed soaks up liquid, so the ultimate amount of flour will be less by nearly a cup.

Another variation I use often is with oatmeal. When the boiled water is poured over the stick of butter, honey and salt, I add in a cup or so of old fashioned rolled oats to the hot liquid to soak. Once cooled enough, proceed with the recipe as stated, knowing you will need less flour than called for. Keep an eye on the texture of the dough, noting that if the dough starts trying to climb up the dough hook, it is more dry than needed. Softer dough will yield more tender bread.

If you like nuts, such as walnuts or pecans, they can be added either finely ground or coarsely chopped, as desired. The amount of flour should not vary widely with the addition of nuts. Use raisins the same way, for that variation. For cinnamon raisin bread, when patting out one loaf of dough, and prior to rolling up, brush the dough with melted butter and sprinkle with cinnamon, or cinnamon and sugar. If raisins have not been added to the dough itself, they may be sprinkled on before rolling up the loaf.

If you choose a less sweet dough, lower the amount of honey by half, and add in another half cup of water, to keep the amount of dough approximately the same. If you want to use only egg whites instead of whole eggs, that is acceptable. If you have leftover egg yolks and need to use them, just yolks in the recipe will work fine. Either way, remember that slightly less liquid is being used, so either compensate by adding a little more water or a little less overall flour. Eggs, either whole or just the yolks give the bread a lovely golden color. If you want to increase the golden color even more, use saffron. Take a pinch of saffron and either grind to a fine powder or crumble finely and add to the boiling water at the beginning of the recipe. Alternatively, soak the saffron threads in the boiled water, then remove the threads before pouring into the mixer bowl.

If you want to make dinner rolls such as cloverleaf, one loaf of dough will yield a dozen rolls, made in greased muffin tins. Baking time is approximately 12 to 15 minutes. If you would like to make buns, one loaf will make about 6 to 8 buns. Divide one loaf worth of dough into the appropriate amount of equal sized pieces. Take one piece and make a nicely formed ball by tucking under repeatedly. Then either with hands or a rolling pin flatten the dough to an exaggeratedly wide and flat round. It may take some work. Lay these onto a greased baking sheet and allow it to rise. Bake for about 15 to 18 minutes.

These are some of the many ways to make changes and alterations. Get familiar with the dough and how it works and there is no limit to what can be done.

My Bread Making Tradition, My Mothers Recipe

By now I am sure you have read a lot about the theory of making good bread from scratch. Start with a recipe that I have been using for the last 40 years and enjoy your results. I had to learn to make bread at age 21, in a foreign country, without an oven. With all the modern conveniences today, bread making is a snap. It is my recommendation that it be made completely by hand at first so the look and feel of the dough becomes known. Later on, using a machine or mixer, you will understand better what you are seeing, and instinctively know how to correct, if things go awry.

My Mom's Bread Recipe

3 cups milk, scalded (just when tiny bubbles start forming at the edge of the pan)

1 stick unsalted butter

1/2 cup sugar

4 cups bread flour

2 - 3 teaspoons salt

2 packets Instant Rise or Rapid Rise yeast

4 cups more flour, or more, as needed

In a saucepan, scald the milk. Once the tiny bubbles begin, remove from the heat and put in the stick of butter and the sugar. Allow the milk to cool and the butter to melt or soften until a pinkie finger inserted into the milk will not feel hot. In a very large bowl, place the flour, salt and yeast and stir to combine. Add in the lukewarm milk mixture and stir with a wooden spoon. Add in the eggs, beating well after each addition. Begin adding in more flour, a cup at a time. Once it is too difficult to stir with the spoon, use hands and continue mixing. Once 7 1/2 cups of flour are incorporated, begin counting the 10 to 12 minutes of kneading time.

The bread may be turned out to be kneaded on a floured surface. This allows for two hands to be used, making it easier, but also

affords the possibility of adding too much more flour. The bread should be smooth and elastic after the kneading period. Adding too much flour will toughen the dough unnecessarily. Kneading is nothing more than manipulating the dough, by pushing it with the heels of the hands, flipping, rotating and pushing some more. If the dough is left in the bowl, there is no need for too much more flour to be added, but requires one hand to do all the kneading. Lift the dough, pulling and twisting, press back down, pull and twist and continue until the 10 to 12 minutes have elapsed. Set the bowl aside is a warm place to rise until about doubled in size.

Grease 4 medium loaf pans, about 4 x 8 inches. Turn the dough out onto a floured surface and knead gently to remove the large air pockets. Divide the dough in 4 sections. Press one section flat; beginning at one end, roll the dough into a log, tucking ends and edges as necessary. Place into one of the prepared pans; repeat with the other three sections of dough. Set the pans aside to rise in a nice warm area of the kitchen. It will take 30 to 45 minutes. Just as the dough is above the edge of the pan height, preheat the oven to 350 degrees. When the oven is hot, put the pans in and time for 30 minutes.

The finished loaves should have a hollow sound when tapped on the bottom, once turned out of the pan. All ovens vary. If you have convection, I recommend using it, setting the oven at 325. Convection, which blows the heated air, bakes more quickly and efficiently. In my present oven, the bread takes 28 minutes to come out perfectly, and not too dry. Learn your oven.

It is best to wait until the bread is cool to slice, though the temptation to cut immediately is great. My Mom always cut the heel off, buttered it still steaming, and let us all have a bite. Complete nirvana. Do try this out. I guarantee the satisfaction is well worth the time. The loaves can easily be frozen until needed. Remember: this is homemade, with no preservatives. These loaves will not last a week on the counter. But then, one of these loaves rarely lasts a day or two.
